With a family history of low blood sugar, I am always looking for a way to add more protein into my family meals. I have used this flour mixture for many years without anyone noticing a difference.
- 1 cup (heaping) unbleached flour
- 1 Tbsp. soya flour
- 1 Tbsp. wheat germ
- 1 Tbsp. powdered milk
I was told that soya and soy flour are the same. Until lately, soy flour was easier to find. This website will shed a little light on the differences.
You may prefer to mix a 5 lb. bag of flour with the ingredients at one time. I have found that there are approximately 18-20 cups of flour in a 5 lb. bag which means you will want to add between 18-20 tablespoons of each ingredient. Give it a try!
