Basic Quaker’s Best Oatmeal Cookies

The Quaker's Best

This is your basic oatmeal cookie recipe, but I enjoy changing it up a bit depending on the occasion.  I have used chocolate chips, white chocolate chips, walnuts, peanuts and even coconut flakes.  I bet you have a few ideas of your own. Basic Quaker’s Best Oatmeal Cookies

  • 1¼ cups butter
  • ¾  cup firmly packed brown sugar
  • ½ cup sugar
  • 1 egg
  • 1 tsp. vanilla
  • 1 ½ cups flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 3 cups Quaker oats, uncooked

Beat together butter and sugars until light and fluffy.  Beat in egg and vanilla.  Combine flour, baking soda, salt and spices; add butter mixture, mixing well.  Stir in the oats.  Drop by rounded tablespoon onto a greased cookie sheet.  Bake in a 375 degree oven for approximately 8-9 minutes.  Let cool on rack. Yields at least  4 dozen cookies.
