Celebrate St. Patrick’s Day with a Green Irish Breakfast

I doubt that Dr. Seuss was Irish, but he wrote an entire book about green eggs and ham.  I’m sure he won’t mind us borrowing his idea for a St. Patty’s Day traditional breakfast of eggs, Irish sausage and Boxty (Potato Griddle Cakes).  Add a little green food coloring and Dr. Seuss would be proud.

Look for the Irish sausage they call “Bangers”–don’t ask!  If you can’t find them, any good breakfast sausage will do.  I wouldn’t attempt to color the sausage, personally it doesn’t sound too appealing. So you be the judge.

If you want fried eggs, it works best to separate the egg whites from the yolk, adding green food coloring only to the whites.  Then carefully add back the yolks before frying the eggs.  If you prefer scrambled eggs (much easier), whisk them with a little milk, seasonings and a couple drops of green food color before scrambling the eggs.

Here is a recipe for Boxty which is very close to my Mother’s potato pancakes:

  • ½ cup grated raw potatoes
  • ½ cup mashed potatoes (leftovers work well)
  • ½ chopped small onion or a few chopped scallions
  • ½  cup flour
  • 1 egg
  • 1 tablespoon milk or cream
  • Salt and pepper to taste
  • Cooking oil

Combine all the ingredients together and make into patties.  Fry them in a skillet with cooking oil until golden brown.  You can add a little green food coloring to the mixture or better yet, serve them up with green applesauce.
