Cranberry Muffins

I love my Banana Bread, and then I changed it up a bit and discovered this yummy Cranberry Muffins. I think you will love it too!
Cranberry Muffins
- 2 cups all-purpose flour
- ¾ cup sugar
- 1 ½ tsp. baking powder
- ¾ tsp. baking soda
- Pinch of salt
- 1 egg
- 2 Tbsp. melted butter
- 2 Tbsp. hot water
- ½ cup orange juice or mixed juices
- 1 cup dried cranberries
- ½ cup walnuts
Combine the wet ingredients with the dry ingredients. Add the cranberries and walnuts last. Transfer to a muffin pan (the muffin cups are easy) and bake at 350 degrees for 45-50 minutes or until done. Serve with a little melted butter over the top sprinkled with a little powdered sugar.
