Sugar-free Cookies in a Jar

With the holidays right around the corner, it’s time to start planning to remember our diabetic or diet-challenged friends. Here is an idea that uses Splenda granulated sugar substitute for layered gift mixes.

This idea uses the same recipes as the Cookies in a Jar but made for people who need to eliminate sugar. Simply mix all the dry ingredients for the cookies, substituting Splenda (or any granulated sugar substitute that measures one-to-one) instead of sugar or some other sweetener.  Nuts are a great addition and healthy too. If you’re including chocolate chips, make sure you buy the sugar-free brand.

Attach a pretty instruction card to the jar with colorful ribbon. Better still, bake the yummy treat and save your friend the hassle of baking.

This would be an all-around great gift for anyone. You can put all sorts of recipes in jars, from pancakes to fudge to cookies.  Another idea is to put colorful pasta with spices in a jar, and include a jar of homemade sugar-free spaghetti sauce.

Oatmeal Cookies in a Jar

Ingredients:

  • 1 cup flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup sugar substitute
  • 1 tsp ground cinnamon
  • 2 cups oats
  • nuts
  • raisins (go easy on these since they have lots of natural sugar)

Layer the following in a clean quart-sized mason jar.
