This is a very basic and simple recipe for a quick sauce to use over favorite Mexican-style recipes.

  • ¼ cup your choice of oil
  • 1 to 2 garlic minced garlic cloves
  • 1 small minced onion
  • 1 Tbsp. flour
  • 1 cup diced green chili (canned or fresh)
  • 1 cup water

Saute the garlic and onion in oil. Whisk in the flour, add water and chilies (I prefer the canned version). Allow to boil and then simmer for approximately 10 minutes, stirring often.  At this point, I prefer to throw the mixture into my VitaMix or blender for a couple of seconds–no lumps or bumps!  Make up a large batch and freeze to have on hand. This basic sauce can be used for many different recipes. I use this sauce to smother chicken breasts and then melt cheese over the top. My family loves this sauce over my homemade enchiladas.  Use your imagination.
