Grilled Peaches

Following up on Geri’s article on the fun time and delicious food that we had at the local Peach Festival, I want to share this recipe for Grilled Peaches with Vanilla. They’re perfect for a summer cook-out.

We love to grill all year round, but especially in the summer. This delicious recipe is easy to make, healthy, and sure to please.

Grilled Peaches

Serves 8

• 8 ripe peaches
• Juice of 1 lemon
• 1 T. Vegetable oil
• 1-1/2 T. Brown sugar
• 2 tsp. Vanilla extract
• 1/8 tsp. ground Cinnamon
• 1/8 tsp. coarse Salt

Peel, halve and pit the peaches. Preheat the grill to high. Combine the juice of the lemon and oil in a bowl. Add peaches; toss to coat. Place peaches, with liquid, on a large piece of parchment –lined foil.

Stir together brown sugar, 2 tsp. water, vanilla, cinnamon, and salt. Brush over peaches. Fold foil to form a packet, crimping edges to seal. Grill, covered, for 15 minutes.

Slice peaches, and divide into 8 bowls. Top with vanilla ice cream.
