Homemade Potato Soup

One of my favorite comfort foods is potato soup. I love to curl up on a cold day with a hot bowl topped with cheese. Try this recipe:
Homemade Potato Soup
- Cut up 6-8 large potatoes
- ½ tsp. oil
- 3 cups milk or half-n-half
- ¼ cup bacon cut in small pieces
- 1 medium onion, chopped
- 3 Tbsp. flour
- Salt and pepper to taste
- Add the oil to water and cook potatoes until tender
- Cook the potatoes down to approximately 1 cup of liquid
- Stir in 3 cups of milk or half-n-half
- Whisk in the 3 Tbsp. flour to thicken (adjust the flour for desired consistency)
- Sauté the onions and add to the soup with the bacon
- Salt and pepper to taste
This is the perfect soup to add to a bread bowl and don’t forget to top it with your favorite cheese.
