Homemade Potato Soup

One of my favorite comfort foods is potato soup.  I love to curl up on a cold day with a hot bowl topped with cheese.  Try this recipe:

Homemade Potato Soup

  • Cut up 6-8 large potatoes
  • ½ tsp. oil
  • 3 cups milk or half-n-half
  • ¼ cup bacon cut in small pieces
  • 1 medium onion, chopped
  • 3 Tbsp. flour
  • Salt and pepper to taste
  • Add the oil to water and cook potatoes until tender
  • Cook the potatoes down to approximately 1 cup of liquid
  • Stir in 3 cups of milk or half-n-half
  • Whisk in the 3 Tbsp. flour to thicken (adjust the flour for desired consistency)
  • Sauté the onions and add to the soup with the bacon
  • Salt and pepper to taste

This is the perfect soup to add to a bread bowl and don’t forget to top it with your favorite cheese.
