One of our big treats growing up was my Mother’s Pineapple Upside-Down Cakes.  I loved to get to the bottom where all the melted butter and brown sugar was hiding.  Instead of a cake, try the muffins.  It is sure to be a family favorite!

Pineapple Upside-Down Muffins

  • 1½ cups all-purpose flour
  • ½ cup sugar
  • 1 egg
  • 1 cup buttermilk
  • 2 ½ Tbsp. melted butter
  • 1 tsp. baking powder
  • 1 ½ tsp. cinnamon
  • Pinch of salt

Add these ingredients to the bottom of the muffin cups:

  • ¼ cup melted butter
  • ½ cup brown sugar
  • 1 can crushed pineapple or fresh pineapple

Place the muffin cups into the muffin pan.  In each muffin cup add a little melted butter, sprinkle with brown sugar and top with a few pieces of pineapple, set aside.

Combine all wet ingredients with the dry ingredients, blending well.  Spoon the batter into the muffin cups on top of the brown sugar and pineapple.

Cook in a 350 degree oven for approximately 20 minutes until golden brown.
