Use Your Leftover Mashed Potatoes

If I was marooned on a deserted island and could only have a couple of things to eat, one would be potatoes.  I love potatoes! I love them fried, I love them scalloped, and I love French fries and baked potatoes.  I love my Mother’s potato pancakes with a little ketchup!  So when you need a side dish try this one:

Potato Pancakes

  • 4 large potatoes
  • ¾ cup skim milk
  • 4 eggs
  • 3 Tbsp. heavy cream
  • 3 Tbsp. flour
  • 5 Tbsp. sweet butter

Cook and mash the potatoes.  Blend all the ingredients together. Pour small patties into an oiled skillet and cook until golden brown.

Don’t forget the ketchup or maybe a little applesauce on the side.
