<p>The holidays are almost over, and  there&#8217;s the looming leftover turkey in your refrigerator.  You&#8217;re up-to-here with turkey sandwiches, so try this oh-so-easy casserole dish using my favorite gluten-free pasta from Tinkyada).  You don&#8217;t even have to cook the pasta first!</p>
<h3>Gluten-free Leftover Turkey Casserole</h3>
<p><strong>Ingredients:</strong></p>
<p>1 pkg. small gluten-free macaroni or noodles, <strong>not</strong> cooked (my favorite brand is Tinkyada)<br />
1 cup milk<br />
1 cup fresh turkey broth (you did save your turkey broth, didn&#8217;t you?)<br />
1 can gluten-free cream of mushroom soup (Health Valley)<br />
4-5 diced hard-boiled eggs<br />
1 small diced onion<br />
1/2 lb. diced Velveeta cheese<br />
2 1/2 cup cooked cut up turkey (or chicken)</p>
<p><strong>Directions:</strong></p>
<p>Mix all together and put in a 9 x 13 inch pan. Top with buttered gluten free bread crumbs (or top with Parmesan cheese) and place in refrigerator overnight or bake the same day. Bake 1-1/4 hours at 350 degrees F.</p>

<p><strong>Directions:</strong></p>
<p>Beat eggs and vanilla until light and fluffy. Sift dry ingredients and stir into egg mixture. Add apples and nuts. Mix well. Turn into a greased 9 inch pie pan and bake 25-30 minutes at 350 degrees F. Cut into wedges. Serve with cheese, ice cream, or whipped topping.</p>

<h3>Quick &amp; Easy Gluten-Free Peach Cobbler</h3>
<ul>
<li>1 white or yellow gluten-free cake mix (Betty Crocker has some good ones in your local grocery store)</li>
<li>1 cup oatmeal (gluten-free)</li>
<li>1 stick of butter</li>
<li>1 Tbsp. corn starch</li>
<li>2 large cans sliced peaches in light syrup</li>
</ul>
<p>Preheat oven to 350 degrees F.</p>
<p>Spray a 9&#215;11 inch cake pan with cooking spray. Drain 1 can of peaches and dump into pan along with the second can of peaches WITH syrup. Sprinkle with cornstarch and gently stir into cake pan. You don&#8217;t have to dissolve or mix completely. In a medium bowl, combine cake mix and oatmeal. Evenly distribute over the top of the peaches. Dot with slices of butter and bake for 45 minutes.</p>
<p>Excellent hot or cold, by itself or a la mode.</p>
<p>Servings: 12<br />
Time: 10 Minutes Preparation Time<br />
45 Minutes Cooking Time</p>

<p>Before I went Gluten-free, my husband and I enjoyed most any dessert that are on the market.  I can&#8217;t eat most anything made with regular flour, but there are times when I still want dessert, especially when we&#8217;re having a celebration that includes yummy treats for everyone else.  So I came up with a way to make single serving Gluten-free desserts that I can enjoy.</p>
<p>I buy a gluten-free cookie or cake mix. <a href="http://www.bettycrocker.com/products/gluten-free-baking-mixes" target="_blank">Betty Crocker</a> just came out with a line of Gluten-free cake, cookie, and brownie mixes that are perfect for this recipe, or you can use any of the other gluten-free products on the market. Put a few tablespoons of the batter in a single serving microwave-safe dish. Then I add whatever sounds good to me to create a single serving dessert.  Mini marshmallows, nuts, and chocolate chips make a yummy cake. Recently, I combined oatmeal cookie mix with almond milk and chopped pecans to make a cake batter.</p>

<ol>
<li>Put a 2-3 tablespoons of the mix in a single serving microwave-safe dish.</li>
<li>Add 1-2 tablespoons of liquid until it is cake batter consistency.</li>
<li>Add any additional ingredients like mini marshmallows, nuts, fruit, or mini chocolate chips. You only need a teaspoon.</li>
<li>Microwave it for 60 seconds. Do not stir.</li>
<li>Add 10-15 second intervals until a dime-sized center is still moist.</li>
<li>Let sit a couple minutes.</li>
<li>Put whipped cream on top and enjoy.</li>

<p>You may have to experiment with the cooking time depending on the strength of your microwave.</p></blockquote>
<p>Currently, I am using a box of brownie mix to make single serving desserts. I like almond milk as my liquid ingredient, but you can use milk, soy milk, or water. You can also add pureed fruits or small bits of fruit.</p>
<p>This is so much fun. I get to be creative, economical (since I add stuff that is on hand), enjoy a &#8220;fancy&#8221; dessert, and control portions/calories all at the same time.  And of course, you can always bake the whole gluten-free cake, and go for broke!</p>
