<p>We’re all a bit overstuffed from the holidays, and are trying our hardest to use up leftovers. What do you do with leftover eggnog? Here are a few of my favorite things to do with the tasty treat.</p>
<p><strong>Pancakes &amp; French Toast:</strong> Substitute eggnog for the milk in your favorite pancake mix. Or dip your bread in a mixture of eggnog and eggs for French toast. It adds a sweet nutmeg-y flavor to your breakfast. You can reduce the amount of sugar to balance out the sweetness.</p>
<p><strong>Eggnog Latte – Eggnog Coffee Recipe</strong></p>
<p>Ingredients:<br />
2 shots espresso OR 1/2 cup of strong coffee<br />
2/3 cup eggnog<br />
1/3 cup milk<br />
sugar<br />
*optional whipped cream and nutmeg<br />
Variation: If you want to make this as an evening cocktail, add a shot of rum.</p>
<p>Directions: Pour espresso/concentrated coffee into a mug. Warm your eggnog and milk mixture in the microwave. (Approximately 2 minutes) Add steamed eggnog/milk mixture to the coffee. If you prefer your eggnog latte sweeter, add a little sugar. Top off with whipped cream and a pinch of nutmeg. Enjoy!</p>
<p><strong>Eggnog Milkshake<br />
</strong>1 cup eggnog<br />
1/4 teaspoon vanilla<br />
1 scoop vanilla ice cream<br />
Nutmeg</p>
<p>Directions: In blender combine first 3 ingredients and mix until frothy. Sprinkle with nutmeg.</p>
<p><strong>Eggnog Bread<br />
</strong>Ingredients:<br />
2 eggs<br />
1 cup sugar<br />
1 cup dairy eggnog<br />
1/2 cup butter, melted<br />
1/4 tsp. nutmeg<br />
2 tsp. rum extract<br />
1 tsp. vanilla<br />
2-1/4 cup flour<br />
2 tsp. baking powder</p>
<p>Directions: Preheat oven to 350 degrees F. Grease bottom of loaf pan. Beat eggs; add sugar, eggnog, butter, rum, and vanilla. Blend well. Add flour, baking powder, and nutmeg. Stir until just moistened. Pour into greased pan.<br />
Bake at 350 for 45-50 minutes or until toothpick comes out clean. Cool 10 minutes. Remove from pan. Cool bread completely before slicing. This freezes beautifully.</p>

<p>The holidays are almost over, and  there&#8217;s the looming leftover turkey in your refrigerator.  You&#8217;re up-to-here with turkey sandwiches, so try this oh-so-easy casserole dish using my favorite gluten-free pasta from Tinkyada).  You don&#8217;t even have to cook the pasta first!</p>
<h3>Gluten-free Leftover Turkey Casserole</h3>
<p><strong>Ingredients:</strong></p>
<p>1 pkg. small gluten-free macaroni or noodles, <strong>not</strong> cooked (my favorite brand is Tinkyada)<br />
1 cup milk<br />
1 cup fresh turkey broth (you did save your turkey broth, didn&#8217;t you?)<br />
1 can gluten-free cream of mushroom soup (Health Valley)<br />
4-5 diced hard-boiled eggs<br />
1 small diced onion<br />
1/2 lb. diced Velveeta cheese<br />
2 1/2 cup cooked cut up turkey (or chicken)</p>
<p><strong>Directions:</strong></p>
<p>Mix all together and put in a 9 x 13 inch pan. Top with buttered gluten free bread crumbs (or top with Parmesan cheese) and place in refrigerator overnight or bake the same day. Bake 1-1/4 hours at 350 degrees F.</p>

<p>The holidays have passed and there are still nuts in their shell left in my Christmas nut bowl that adorns my table every year.  The family has grown tired of them and so they sit. But what can you do with the leftovers?</p>
<p>Here are a few ideas that come to mind.</p>
<ol>
<li><strong>Fill a large bowl:</strong>  Geri gave me a beautiful bird bath last year and it adorns my front hallway.  For the holidays, I placed a large candle in the center with lovely Christmas balls.  Afterwards, I replaced the decorations with the mixed nuts.  The variety of colors in the shells look lovely with the red glass. You could easily use a large dish or beautiful bowl.  When the weather gets nice, I&#8217;ll put the birdbath with the nuts out in the yard.<img class="size-medium wp-image-4145 aligncenter" title="nuts-birdbath" src="http://strivetosimplify.com/wp-content/uploads/2010/03/nuts-birdbath-225x300.jpg" alt="Nuts in a Bowl" width="225" height="300" /></li>
<li><strong>Feed the squirrels and birds:</strong> Put the nuts out in your backyard.  Birds need the three essential unsaturated fatty acids (linolenic, linoleic, and arachidonic acids) to keep their skin and feathers healthy, among other benefits. Essential fatty acids require Vitamin E for absorption and nuts provide it in the proper balance. Be sure the nuts are not old or stale.</li>
<li><strong>Freeze them:</strong> If the nuts are still relatively fresh, put them in the freezer where they will keep fresh until you can use them.</li>
<li><strong>Shell them:</strong>  This takes work but you&#8217;ll have a nice supply of nuts for cooking throughout the year.  Store them properly once shelled.</li>
<li><strong>Make a Fall Nut Wreath:</strong>  You&#8217;ll be way ahead of the game for next autumn.  Start with a wreath form, and using your glue gun, attach the nuts to the form.  Fill in holes with moss and cinnamon sticks.  It&#8217;ll be beautiful on your front door.</li>
<li><strong>Make Nut Christmas ornaments:</strong> Again, use your glue gun to group clusters of nuts together. Add a pretty ribbon and you&#8217;re ready for hanging. </li>
<li><strong>Make a Cute Critter:</strong> Paint walnuts, add some paper ears, paint on a cute face like a kittie, and you have a cute critter.</li>

<p>The mask and shampoo couldn&#8217;t be easier. Only fresh egg yolks are required. And we love the way we&#8217;re saving money too!</p>
<p><strong>Egg Yolk Facial Mask</strong></p>
<p>The best homemade facial mask that I have used is a raw egg yolk. just apply the raw yolk to your face and neck for 30 minutes and rinse with cool water. The mask is very effective in healing blemishes. Egg yolks are high in vitamin A, which is used in many skincare products designed to target acne. To use egg yolks as a mask, simply break up the yolks with a fork and spread over your face and neck. Leave to dry and then rinse off with cool water.</p>
<p><strong>Egg Yolk Shampoo</strong></p>

<p>Whisk a few egg yolks and apply them to your hair and scalp, combing through in order to achieve full coverage. Leave the yolks for a few minutes, then rinse out using cold water so you don&#8217;t cook the egg.</p>
<p>This method gives hair a natural protein treatment, as well as helping to prevent dandruff due to the sulfur component of egg yolks. Even eating egg yolks is considered good for hair—if you&#8217;re worried about cholesterol, feed the yolks to your dog or cat to give them a shiny coat.</p>
<p><strong>Egg Yolk Tempera Painting</strong></p>
<p>Botticelli&#8217;s Birth of Venus was painted using an egg-yolk based paint! Mix 1 egg yolk with 1/4-1/2 teaspoon of water, and then add small amounts of pigment. Egg tempera is suitable for painting on wood, cloth and parchment, and produces very clear, easily-altered colors. You can even use egg yolk paint to make design on sugar cookies before baking them.</p>

<p>We&#8217;ve all had this happen before&#8230;milk that&#8217;s <em>just</em> too sour to drink. Do you pour it down the drain?  Don&#8217;t! Slightly sour milk is fine for cooking. The challenge: use up the 1/2 gallon so I don&#8217;t throw it away.</p>
<p>I have 1/2 gallon of fat free milk that no one wants to drink, even me! After performing the &#8220;sniff test&#8221; more than once, the milk was deemed past the drinkable stage.  It&#8217;s time to cook creatively!</p>
<p>A half a gallon is a lot of milk!  I can&#8217;t think of one recipe that would use it all, so it looks like I&#8217;ll be cooking all weekend. Here&#8217;s how I used up this milk, and by using food already found in my pantry and freezer.</p>
<p>HOT TIP! If you don&#8217;t have time to cook right away, freeze the milk in one cup increments to use later.  Thaw, mix it up, and cook.</p>

<p><strong>Pumpkin Vanilla Pie </strong></p>
<p>2 cups of the sour milk<br />
one vanilla instant pudding<br />
one can pumpkin<br />
pumpkin pie spice<br />
leftovers from 2 containers of cream cheese<br />
graham cracker crust</p>
<p>Using my mixer, I combined the milk and the pumpkin until smooth.  Blend in the pudding mix.  I was actually planning to stop there and put the pudding into cups, but it seemed too blah.  I added about 1 tsp of pumpkin pie spice.  After foraging in the refrigerator, I found 2 tubs of cream cheese with about 1/4 cup each- one regular, and one blueberry.  Those were also whipped in. The blueberry cream cheese added some blueberry bits and cream cheese flavor, but the blueberry flavor was overwhelmed by the pumpkin.</p>
<p>In the pantry, I found a graham cracker crust that I bought when it was on sale at the grocery store. ($1.20 off the regular price)  Refrigerate and enjoy.</p>
