White Beans for Soup

This is one of my favorites which may quickly become one of yours!

White Bean Soup

  • 2 cups dried navy beans
  • 3 Tbsp. olive oil
  • 4-5 cubed red potatoes
  • 1 small onion
  • 1 clove garlic
  • 2-3 sliced carrots
  • 1-2 celery
  • 5 cups vegetable broth
  • Parsley
  • Salt and pepper to taste

Add the beans to 5 cups water and cook until tender then drain.  Heat the olive oil and sauté the potatoes, onions, carrots and celery.  In a large pot add all the ingredients to 5 cups of water and let simmer for 1-2 hours.  Finally add the parsley and season to taste with salt and pepper.

Don’t forget the cornbread!
