Yummy Lemon Muffins

How can anyone resist a lemon muffin with a hot cup of tea? This is a great recipe for a brunch or to serve at a wedding or baby shower. If you are not crazy about lemon, try changing it up by using oranges.
Yummy Lemon Muffins
- 1½ cups all-purpose flour
- ¾ cup sugar
- 2 tsp. baking powder
- ½ cup milk
- 6 Tbsp. soft butter
- 2 eggs
- Grated zest of 2 lemons
Topping
- Juice of 2 lemons
- ½ cup sugar
Combine the wet ingredients with the dry ingredients. Place muffin cups into the muffin tin and spoon the batter into each cup (3/4 full). Bake at 350 degrees for 20 minutes or until golden brown.
Prick the muffins with a fork and drizzle with the topping mixture.
