During the holidays I can remember my Grandma making this cake.  Doesn’t sound so appetizing, but believe me it is!  I hope you will enjoy this recipe.

Grandma’s Mayonnaise Cake

  • 1 cup chopped dates
  • 1 cup chopped nuts
  • 1 cup mayonnaise
  • 1 cup sugar
  • 1 cup boiling water
  • 1 tsp. baking soda
  • 1¾ cup flour
  • 3 Tbsp. cocoa
  • 1 tsp. vanilla

Mix the dates and nuts; add soda into the boiling water and pour over the dates and nuts.  Mix sugar and mayonnaise, beat well.  Sift dry ingredients and mix together with the wet ingredients.  Add vanilla.  Bake in the oven at 350 degrees until done.

I don’t have my Grandma’s recipe for the frosting to this cake, and since she has passed on now, I use the recipe for my carrot cake which is a cream cheese frosting.  If anyone has the original recipe for this cake, please let me know!  Try one of your favorite frostings.
