Put several slices into the soaking water for beans. It prevents gas formation better than commercial products. Toss it out when the beans are ready to cook then add a few more slices while the beans are cooking.

Fresh ginger can be kept by filling a quart jar filled with 2/3 white wine and 1/3 water covered in the fridge.
