Smoothie bowl

When I’m rushing out the door for work, I whip up this foolproof smoothie in just a couple minutes. There are many, many smoothie recipes on the internet, but this is my go-to recipe since it uses basic ingredients that I  have on hand in my freezer and refrigerator. I am dairy intolerant so I can’t use yogurt or milk in my smoothies, but I do seem to tolerate whey protein powder which adds the creaminess of milk.

Best of all, it keeps me full for hours, packs loads of Omega-3s from flaxseed, vitamins and minerals from leafy greens and fruit, and it tastes great. It uses my homemade frozen spinach cubes to add the punch of nutrition from leafy greens without altering the taste.

Carol’s Favorite Smoothie Recipe

1 cup of your favorite organic frozen fruit. That could be bananas, strawberries, blueberries (in the photo at the top), peaches, or mixed berries. Your choice!
4 spinach cubes, or handful of fresh greens 2 T. protein powder. I prefer plain or vanilla whey or pea protein, but use any that you can tolerate. 1 T. flaxseed 1-2 packets of Stevia, to taste

1 cup water or almond milk

There’s usually no need to add extra ice since the fruit and the spinach cubes are frozen. But if yours is not thick enough, add some ice cubes. Too thick? Add more water or milk.

Blend on high in your blender. Enjoy!
