This is one of my favorite family recipes.   I usually make several loaves during the Christmas holidays to give to friends and neighbors.  When my husband and I were first married, he informed me that he didn’t like zucchini.  But, he loved this recipe for years until he found out there was zucchini in it (many years later).  Oops!  So the old saying is true, “what they don’t know won’t hurt them”.

Zucchini Bread

  • 3 cups all-purpose flour
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • 2 tsp. cinnamon
  • ¼ tsp. nutmeg
  • Pinch of salt
  • 1 ¾ cups sugar
  • 1 cup canola oil
  • 3 eggs
  • 2 cups grated zucchini
  • 2 tsp. vanilla
  • 1 cup chopped walnuts

Combine the wet ingredients with the dry ingredients.  Fill a loaf pan at least three fourth of the way full and bake in a 350 degree oven for approximately 50-60 minutes or until a knife comes clean when inserted into the bread.  It’s yummy with a little melted butter over the top.  Enjoy!
